Work Week Starter: Tuna with Ampalaya Leaves

























It's Monday again and everyone's hustling back to the daily grind. Busy bumble bees may feel a bit draggy but it's not all bad. Mondays also mean another week to start dreaming and to make dreams a reality [#cliche much but it's true].

To embrace the "bitterness" that usually comes with Mondays, here's a simple recipe with loads of bitter gourd greens.

The Recipe

Canned Tuna [if fresh tuna is available, better]
Tomato [1 big]
Onion [1 head]
Garlic [4 cloves]
Ginger [a tablespoon]
Soy Sauce [a teaspoon]
Malunggay leaves [1/4 cup]
Ampalaya Leaves [ About 10 leaves]

 Directions

1. Saute ginger, garlic and onions in oil. Wiat until onions become translucent. Add tomatoes and soy sauce. 

2. Drop tuna meat and cook for a few minutes. 
3. Stir in malunggay and ampalaya leaves.
4. Season with salt and pepper.
