Sidekick Hero: Tofu in Lemongrass Sauce
In storytelling tradition, sidekicks enhance our appreciation of a hero's character. Take for example Robin to Batman, Dr. John Watson to Sherlock Homes, Patrick Starfish to Spongebob Square Pants. The list goes on.
Sidekicks, in numerous instances, provide that needed "kick" to an otherwise dull plot. Sometimes sidekicks are so fabulous, they can overshadow the hero.
The same is true on the table. A side dish adds dimension and depth to our experience of the main dish. It complements the flavors that we savor from chief entrees. For Filipinos, side dish can also lessen umay.*
Today, I prepared a healthier version of the classic tokwa't baboy (tofu and pig's ears)--which is the default partner to goto/lugaw (rice porridge).
*Roughly translates to surfeit or unpleasant satiety.
The Recipe
Tofu cut into small cubes
Carrot
Bell Pepper
Onion
Garlic
Lemongrass
Ginger
Lemon (optional)
Oyster Sauce
Soy Sauce
Sugar
Salt
Water
For Flour Mixture
Flour
Cayenne Pepper
Salt
Pepper
Directions
1. In a saucepan, mix soy sauce, water, sugar, salt, pepper, and lemongrass. Simmer then set aside.
2. Dredge tofu cubes in the flour mixture then fry until crunchy.
3. In a pan, saute onions, garlic and ginger. Add oyster sauce. Add bell pepper, carrots, and pre-fried tofu
4. Add the lemongrass soy sauce mixture. Combine flour to water to make slurry. Add to the dish to thicken sauce.
5. Top dish with chopped garlic and ginger. Squeeze in a lemon for added flavor (optional).
6. Serve hot.
